Zak's Diner was established in 1986 when John Borsten and partners opened a tiny 26-seat restaurant in Ottawa's ByWard Market, named after one partner's son, Zak Firestone. The city took to it immediately. Teal vinyl booths, vintage artwork, mini-jukeboxes at the tables, and a soundtrack of classic tunes made it one of the ByWard Market's enduring restaurants, with the original keeping its doors open 24 hours on weekends.
Zak's grew to five Ottawa-area locations, several run by partners who started as busboys and worked their way up. The guest book runs deep: Alanis Morissette, Sandra Oh, Drew Barrymore, and Ryan Reynolds have all slid into the booths.
