Wild Wing took flight on St. Patrick's Day 1999 in the small town of Sunderland, Ontario. Founder Rick Smiciklas, with a daughter on the way, built a single casual dining room around fresh, never-frozen chicken wings and a sports bar atmosphere. The concept caught fire. Franchising began in 2003, and by 2008 there were 32 locations across Ontario. In 2015 Montreal-born Clark McKeown bought the chain, moved headquarters to King City, and accelerated the expansion. Today over 100 Wild Wing locations stretch from British Columbia to Quebec, each locally owned and operated, and the chain defended its Canadian turf against the American competitor Buffalo Wild Wings.

The number that defines the menu is 101. One hundred and one sauces, rubs, and glazes, from honey garlic and sweet Thai chili to a heat level called the "911". Wings arrive bone-in, drumettes only, or boneless, and flavours mix and match in a single order. Beyond the wings the menu spans burgers, wraps, flatbreads, nachos, and poutine, with big screens lining the walls.
